Hi there! It’s the day before classes start, and I’m about to go into marathon planning mode. But first, links. This week’s links are all about the outdoors, travel, and food – because isn’t that what’s on everyone’s mind during the first week of school?
Outdoors
The case against privatizing National Parks – I’ve been trying to put together some coherent thoughts about this, but it baffles me that this argument is even needed. So read this article instead.
6 things we should be doing in the backcountry
10 thru-hikes that aren’t the Pacific Coast Trail or Appalachian Trail – I’m enamored with the Pacific Northwest National Scenic Trail now.
Things to do at Black Canyon of the Gunnison National Park – Colorado’s lesser-known Park.
Travel
On traveling alone as a married woman
London is expensive – here’s a cheapskate’s guide to visiting
Food
First, several recipes we’ve already tried and given a thumbs up: vegetable enchilada pie, garlic basil barramundi skillet with tomato butter sauce (I made with tilapia), Brazilian shrimp stew, one-pot summer pasta, and easy vegan waffles for one.
Sesame garlic noodles with broccoli, basil, and crispy tempeh
Tuna green chili zoodle casserole
Vegan grøstl (Austrian potato hash)
2-ingredient salted peanut blondie bars
Chocolate chip zucchini donuts
Chickpea flour chocolate chip cookies
Tried any good recipes recently?
What do you start daydreaming about amid school/work?
I am loving that Cheapskate’s guide to travelling because this girl is always about finding the most affordable options when travelling so I can travel more often! Sure I could go all out and splurge – but then I’d have to wait such a long time til my next trip!
